| | Background | | In 1925 Amadio Fasoli established his vineyard and was soon delivering his quality wines by horse and cart to the best taverns of nearby Verona, Vicenza and Padua. His sons Gino and Gigi built on his work and began to create a reputation further afield. | | ![Background]() |
| | The estate | The Fasoli vineyards are located in the lower Illasi valley, province of Verona, Northern Italy. They are currently cultivating 64 acres of vineyards divided into seven parts. The soil type varies from one vineyard to the other, which has helped determine which varieties should be planted in which vineyard.
Initially there were just three organic wines: a Soave, a country white, and a sparkling 'Frizzante', but over the years the range has developed.

| | Organic philosophy | Gino's sons Amadio (1952) and Natalino (1956) switched to organic cultivation, after they and their families had suffered health problems caused by chemical pesticides and other products. Since 1984 all their vineyards are organic.
They have also helped other small farmers nearby to convert to organic methods, and every year, high school and university students come on 3 month placements.
The Fasoli brothers priority is to best represent the different possibilities from a single grape variety. They achieve this by selecting clean, healthy fruit, picked at optimum ripeness, from well-managed vineyards. Their aim is to express something 'quiet' but memorable.
Most Saturdays you'll find Natalino and Amadio in the cellar, monitoring the wines and chatting with friends and customers. They witness every single bottling and track the evolution of their wines with their great friend and oenologist Menini Umberto.
In general, Natalino thinks the wines reflect his character - 'gentle, realistic, sometimes strong but never intrusive, with good potential.
