Vinified using the charmat method, it’s classified as an ‘extra dry’ Prosecco (but don’t be fooled this category is less dry than ‘Brut’). It's pale straw in colour with floral aromas and flavours of ripe apple and citrus. The overall effect is harmonious, fairly rich and rewarding. Best as an aperitif or with white meats, or pasta with delicate sauces. Grape varieties: Prosecco "The best Prosecco tends to have lower yields and is sourced from hillside sites in the Conegliano-Valdobbiadene district. My two favourites had considerably more personality than the other proseccos I tasted. One of them, Col di Manza, is quite sweet, but it’s a mature honeyed style with real intensity."
