In 1990 it was taken over by Thierry Despres with its vineyards in a sorry state. He's worked hard to restore the estate and this wine shows how far he's come. By using supra-extraction techniques which involve freezing the hand-picked grapes before crushing at low temperature, he is able to maximise the aromas and richness of the juice. The wine is aged for around 11 months in new French oak barriques. It's an unusually rich and rounded Bergerac Sec with lemony, lees-y fruit, well handled oak and nice tangy edges. Thierry named the cuvee in 1993 likening the wine to his wife - lively in her youth, blossoming delightfully with age. "Le parallèle me semble toujours assez vrai" he says rather touchingly.
