Auxerrois Sparkling, Davenport
Auxerrois is a grape variety that always attracts interest although it’s better known, amd more widely grown (!) in Alsace than the UK. Will’s ‘alternative’ sparkling wine is traditionally bottle-fermented and spends 24 months maturing in the bottle. Natural yeast is used for the first fermentation. The wine has a very clean, fruity style with subtle flavours of peach and fresh grapes. Refreshing and appealing.
