Like his father and grandfather before him, ex-chef Bernard Delmas tends vineyards in the hills above Limoux in SW France. This pioneer was one of our first suppliers and says ‘fate’ called him back to the land. Sparkling Limoux is made in the traditional champagne method, and both these styles use the traditional local grape Mauzac, which has an aromatic cut grass and appley character.
