Cachaca Silver ‘Abelha’ starts life in Bahia, Northern Brasil, where a collective of small-holding farmers grow sugar cane 100% organically on highland sandy soils it’s harder work, but gives better quality cane and a fuller taste.

Abelha

Abelha Cachaça hails from Rio de Contas, a beautiful old mining town which sits amongst the hills and valleys of the Southern Chapada Diamantina in Bahia state, Brazil. Production is coordinated by Marcos Vaccaro, a visionary who is a recognised national expert on organic agriculture.

The fazenda is beautifully situated at 1200 m and attracts many local tourists for its waterfall pools,  fruit forest, alternative accommodation and, of course, cachaca.
Due to the temperature differential between day and night at this altitude, the organic sugar cane retains its sugar content and is perfect for  cachaça production. Following fermentation the ‘vinho’ (cachaça wine) is distilled in a traditional copper pot known as an ‘alambique’ with a 400 L capacity. Natural aquifers provide the ‘diamond filtered’ water although little dilution is made.

Following carefully controlled production the cachaça is then rested for six months to produce organic Silver Abelha. The Gold (available on special order) is aged in Garapeira wood barrels for three years.
The ethanol which is a by-product of distillation is used to power a car on the estate and the other by-products all re-used by this very environmentally conscious operation as well.
