The Fasoli brothers have championed organic viticulture for many years and have helped other small farmers to convert to organic methods. As their business has developed they have bought in organic grapes both to boost production and to develop new products like their stylish and beautifully presented Prosecco Frizzante, the latest addition to their ‘Corte del Pozzo’ range.

Description
Valpolicella Ripasso Superiore ‘Valpo’
This magnicifent wine is made using the ‘appassimento’ method, where whole bunches of grapes are dried on straw mats to concentrate sugars, flavours and character. After fermentation the wine is mixed with Amarone skins, adding further complexity to proceedings. Red cherries and cassis characters meet a wonderful ripple of eastern spice – cinnamon, clove, black pepper – as well as dark chocolate, coconut and gentle vanillin notes. Quite a mouthful and one that raises the quality bar for most Ripassos.
